    Roasting Delicata brings out the flavor which makes a great Fall side dish with just about everything from chicken, to roasts and chops. You may also like Parmesan Crusted Delicata Squash, Chicken Sausage and Mushroom Stuffed Delicata Squash and Roasted Squash Medley.,Ive been picking them up from Trader Joes but also see them in my supermarket. They have a shorter season than butternut so enjoy them before its too late! You can season them any way you wish, but I love any excuse to get more turmeric in my diet because of its health benefits and the flavor is wonderful.

    Slice the Squash in Half Lengthwise and Scoop Out the Seeds With a Spoon Slice the Seeded Halves Into 1/4-Inch Thick Slices (half Circles) and Place Them in a Large Bowl

    Drizzle the Olive Oil, Salt, Turmeric, Garlic Powder and Black Pepper, Tossing Toss Well to Coat. Lay Flat on the Prepared Baking Sheets and Bake in the Center of the Oven Until Golden Brown, About 10 to 14 Minutes on Each Side. Remove from Oven and Top With Fresh Cilantro and Eat Right Away.
