Spaghetti Alla Carbonara,Great pasta dish.,For anyone having issues with the eggs hardening, you can prevent that by tempering them with a little of the pasta water. I usually mix my cheese, egg, and parsley together and add maybe half a cup of pasta water while it’s still warm whisking constantly. Then dump it over the pasta and turn it for about a minute or two. I’ve never had an issue using that method.,Probably my all time favourite pasta, and this is a great, easy to follow recipe. Don’t overheat, the sauce, the egg will set, the idea is just to warm it.

Cook the Pasta Following the Instructions on the Package. |

Meanwhile, Heat the Oil in a Frying Pan and Saute the Onion and Bacon For 5 Minutes, Until Softened. |

Beat the Eggs in a Bowl, Then Stir in the Cream and Season With Salt and Pepper. |

Stir the Cream Mixture Into Onion and Bacon and Cook Over Low Heat For a Few Minutes, Stirring Constantly Until Heated. Do not Overcook, or Else You Will End Up With Scrambled Eggs. |
