    Buffalo Burgers, Buffalo is so delicious! I was surprised to see few recipes using it on this site. These burgers are great grilled. Remember, buffalo does not need to be cooked as long as hamburger, you do not want to overcook., I added fresh minced garlic, fresh cracked black and white pepper, worschester, olive oil, green and red onion minced / diced, a bit of chipotle ground powder can also fire roast them or use pablano. Yes, do not over cook ur meat. It will cook quite fast. Hand patties raw no more then 3/4 inch middle. Try new Boar’s Head MarBleu cheese w bacon atop!!! CHEERS!, Delicious! I never tried buffalo before but am so glad I did. I worried it would be gamey or too strongly flavored, but it wasn’t at all. I was struck by the different texture of the meat – compared to beef – while raw. It’s quite dense and almost crumbly, not greasy or sticky, obviously because of the lower fat content. This makes it a little harder to work with for burger patties. I added one egg white, beaten, to help the meat bind a bit better. And I think my husband may have overcooked the burgers by about 1 minute or so He left them on for 12 minutes total, or 6 minutes per side. I made 3 thicker patties out of 1 lb of meat instead of four, because I was worried about smaller patties not holding together as well on the grill. Next time I’ll reduce the cook time just a bit and definitely keep the egg white.
