Cheese Enchilada Stack

Features:
    Cuisine:

Yum! Used 8 corn tortillas and that was totally fine. Added one can of black beans, leftover grilled onions from last night's dinner, additional 1/4 c. Mexican blend cheese, did not add green chilis. A quick and tasty dinner. Baked an extra 10 minutes to get the center really cooked. Nice to know about this recipe!

Cheese Enchilada Stack,This recipe is good and fast. Served with salad it makes a great filling meal on a busy night.,Yum! Used 8 corn tortillas and that was totally fine. Added one can of black beans, leftover grilled onions from last night’s dinner, additional 1/4 c. Mexican blend cheese, did not add green chilis. A quick and tasty dinner. Baked an extra 10 minutes to get the center really cooked. Nice to know about this recipe!,Left out chili’s. Made my own enchilada sauce (never buy it). Super easy to make. Melt 4T butter in a pan. Mix about 2-3 heaping soup spoons flour and brown it for a few minutes. Add beef, chicken, or vegetable stock a little at a time and whisk. Add ~5 T Wildtree taco seasoning (you can use your own taco seasoning of choice) to the desired flavor. You can add water or more stock if it gets too thick.
