2 cups blanched shelled edamame
2/3 cup sun-dried tomato, sliced
1/3 cup red onion, diced
1/2 cup black olives, pitted
1/3 cup olive oil
1/4 cup feta cheese, crumbled
2 tablespoons white wine vinegar
1 tablespoon white balsamic vinegar
1 garlic clove, minced
1 teaspoon minced fresh oregano
salt and pepper

Mediterranean Edamame Salad

    used all the ingredients listed plus added an English cucumber quartered, some mini red, orange and yellow peppers chopped. I didn't have the white vinegars on hand so I replaced it with Wegman's balsamic vinaigrette dressing, It was delicious!! I will be making this again for sure! I did omit the garlic and the fresh oregano, because there was garlic in the dressing and I was out of fresh oregano. I think fresh basil would be delightful in it too, or maybe even a little mint! I have a wonderful cayenne pepper olive oil I will use next time, and probably stick with a balsamic vinegar as well.

The flavors are fantastic used kalamata olives, (I would recommend you NOT use the canned black olives) I omitted the feta as I am not a fan Double the batch as you will want more

    Mix Oil and Vinegars in Separate Bowl With Garlic and Oregano.
