Peanut Butter Noodles, Very nutritious and delicious! My kids love this recipe You can use Udon or Rice noodles but I just use spaghettuse vegetable broth for a vegetarian option Also delicious with grilled shrimp or chicken for a heartier pasta I have found the new Barilla Plus Spaghetti is GREAT in this It has a hearty flavor that really compliments the dish , I loved this recipe after adapting it via other reviewer’s suggestions I added garlic, toasted sesame seeds and peeled, seeded and sliced cucumbers I decreased the chili paste and served this as a chilled side dish YUM!, Yum! used about 6 oz of spaghetti and added a few cups of chopped bok choy when there was 3 min left on the noodles Then drained them together and added the sauce Hubby liked it just this way It was rather saucy though so I will use the full 8 oz of noodles next time

Bring a Large Pot of Water to a Boil. |

Add Noodles and Cook Until Tender According to Package Directions. Drain. |

Combine Chicken Broth, Ginger, Soy Sauce, Peanut Butter, Honey, Chili Paste, and Garlic in a Small Saucepan. Cook Over Medium Heat Until Peanut Butter Melts and Is Heated Through. Add Noodles, and Toss to Coat. Garnish With Green Onions and Peanuts. |
