Mango Seasoned Chicken, A quick delectable recipe with a wonderful spice blend. In the summer use fresh peaches, they are wonderful!! from “heart Healthy Cooking” by Becel, I loved it. My husband said its a keeper. Of course I changed the recipe. I had 2 pounds of chicken thighs, so I quadrupled the spices, added garlic and salt, more green onions, two mangos 1 would also be sufficient. The lime and the cilantro give it a kick. The flavor combination is very good. Next time I will use even more spices, especially cayenne and garlic. I fried the thighs in a bit of butter, but I’m sure any oil would do just fine. It’s only ‘bland’ if you don’t use salt. We had ciabatta and an herb salad with it. Yum! Thanks for sharing!, I did add thinly sliced sweet peppers as I had to use them up. I really loved the spice/fruit blending of flavors. Great with the chicken. Thank you Derf, your recipes live on.
