Line a Sieve With a Double Thickness of Dampened Cheesecloth. |

Spoon in Yogurt and Set the Sieve Over a Bowl. |

Refrigerate For Two to Three Hours or Until Yogurt Is About Half Its Volume, Nicely Thick and Creamy. |
