Chipotle Copycat Lime Rice Recipe,This is a copycat recipe I found for this amazing rice, it works perfectly with a nice savory pulled pork that use for making burritos. But it really is good enough to have on it’s own. *edit* I will have to revisit this recipe soon and come up with more precise measurements and possibly using more generic rice.,I think you would get more bang for the lime buck if you A. Zested the peeling and added it in B. added lime juice to rice after it’s cooked. I have seen them do this at Chipotle.,Recipe is totally wrong. It’s 1 cup of rice per 2 cups of water. 2/3 rice and 1 “or” 2 cups of water is absurd. 10 to 15 minutes should be sufficient time to cook the rice. Unless you rinse and soak your rice. Juice of 1 lime. But I’ve found that if you boil the lime juice it looses all the flavor. I add it last with the cilantro.
