Vegan Macaroni and Cheese, A delicious and satisfying version of traditional macaroni and cheese., Wow! We were pleasantly surprised by this recipe. It doesn’t taste exactly like real mac and cheese, but it tastes good in its own right. We aren’t vegan, but my husband is severely lactose-intolerant and this dish worked very well for him. used Silk almond/cashew + protein milk instead of soy milk. I also added 1/2 tablespoon lemon juice to add some tang and ended up using 3/4 teaspoon salt. Very nice recipe!
