    Kielbasa, Potato, and Onion Skillet, This one-pot, easy dish is warm and satisfying. Serve with a crisp green salad. use yukon gold potatoes, but any potato will work., So good, I added fresh chopped parsley and red cayenne sea salt, it was delicious!, Quick, easy, and tasty! I followed the recipe, but added some sauerkraut when I added the kielbasa. It turned out great and my kids liked it too. FYI – used red potatoes and they took quite a bit longer to cook once simmering I kept adding time in 5 minute increments. Just be sure to allow a little extra time, if necessary. Great dish!

    Heat Oil in a Large Skillet Over Medium-High Heat.

    Add Potatoes, Onions, Garlic, and Pepper. Fry Until Potatoes Are Golden and Onions Are Translucent, About 8 Minutes.

    Add Kielbasa and Cook 1-2 Minutes Until Warm.

    Add Broth and Cover Skillet With Lid. Lower Heat to Medium-Low. Cook Until Broth Is Mostly Evaporated, 5-10 Minutes, and Potatoes Are Tender. Be Careful not to Overcook the Potatoes.

    If Potatoes Are not Done and Broth Has Evaporated Completely, Add More Chicken Broth and Continue to Cook Until Potatoes Are Tender.
