Clean Mussels. Chop Lemongrass, Chillies Green Pepper, and Spring Onions and Add to the Pan With the Oil, Garlic and Ginger. Cook For 5 Minutes. Add the Lime Juice and Coconut Milk. Season and Simmer For Ten Minutes. Stir in the Mussels, Cover and Cook For 3-4 Minutes Until All the Mussels Have Opened. Sprinkle With Coriander and Serve With Nice Bread. |
