Directions
San Francisco Pork Chops, Something a little different. The red pepper flakes give it just a little kick., This recipe was featured on a “Great American Recipes” recipe card. On the flip side is the Microwave version. Here it is. —— Ingredients: 4 pork chops 1/2 to 3/4″ thick, 1 Tabl. oil, 1 clove garlic, 3 Tabl. dry sherry or broth, 3 Tabl. soy sauce, 1 1/2 Tabl. brown sugar, 1/4 tsp. crushed red pepper, 1 1/2 tsp. cornstarch, 1 1/2 Tabl. water. ——– Directions – 1 Trim chops of fat. 2 In a rounded microwave safe dish, mix the oil and garlic. Spread evenly. 3 Microwave about 1 min. on HIGH power high wattage microwave ovens may take less time. Be sure not to burn garlic. 4 Add chops to dish with garlic, turning over in garlic oil. 5 Combine sherry, soy sauce, brown sugar and pepper in a bowl, mix, and pour over chops. Cover with wax paper. 6 Microwave on HIGH power for 4 mins., turning chops after the first 2 mins. 7 Keep chops covered and reduce the heat to MEDIUM power, cooking for anther 12 to 15 mins, until chops are no longer pink. About 145-150 degrees F. Remove chops to serving dish. 8 Dissolve cornstarch in water. Stir into pan juices. 9 Microwave on HIGH or 1 to 2 mins. until thickened. Leave uncovered and stir. 10 Pour sauce over chops and serve. A great way to cook chops in summer without heating up your kitchen. We like to serve them with Orange Peanut Noodles garnished with Scallions., I made the following changes, which I don’t think are substantial enough to keep me from rating this fantastic, easy recipe: I didn’t have fresh garlic so used a rosemary garlic seasoning that my sister gave me yum!; I reduced the soy to 3T; I reduced the cooking time to 25 minutes. Trim Fat from Pork Chops. |

Heat 1 T Oil in Skillet. Brown Chops on Both Sides. |

Remove Chops and Saute Garlic For One Minute Being Careful not to Burn. |

Combine 2 T Oil, Sherry or Broth, Soy Sauce, Brown Sugar, and Pepper Flakes. |

Return Chops to Skillet.pour Mixture Over Top. Cover Tightly. |

Simmer Over Low Heat Till Chops Are Tender and Cooked Through 30-35 Minutes. |

Add 1-2 T Water, If Needed, to Keep Sauce from Cooking Down to Much or Burning. Turn Chops Once. |

Remove Chops to Platter. Stir in Cornstarch Dissolved in 2 T Water. |

Cook Till Thickened. Pour Over Chops and Serve With Buttered Egg Noodles. |
