Greek Chicken and Potatoes, This is a deceptive recipe: quick and easy to make with a simple ingredient list but which really delivers the flavor. What more could you want from chicken and potatoes? I find one large lemon yields just about 1/4 cup juice. This recipe makes 4 servings, but my husband and I eat this easily between the two of us., This meal is a staple in my house… I usually serve it with homemade tzatziki sauce and everyone including my very picky daughter, LOVES it. I do add more garlic and some garlic powder to it. So good!, This was delicious. I did parboil the potatoes as other reviewers suggested. I cut them up, put them in cold water, heated until it boiled, turned off the heat and let them cook 5 minutes. They were done perfectly after cooking with the chicken. I also added a bit more lemon juice as suggested, and that also turned out great.
