    Amazing recipe, and oh, so easy to make! I did change the recipe up a bit. I roasted the eggplant, pured the cottage cheese, added an egg to the cottage cheese and mozzarella mixture, and also added some oregano and Italian seasoning. I also used a quick homemade tomato sauce with a touch of red pepper flakes. I served it with a side of whole wheat spaghetti. So, so good!

    Grill Eggplant on George Foreman Grill For About 5-10 Minutes Until Soft. Spray 8x8 Baking Pan With Nonstick Spray. Put Eggplant on Bottom of Pan. Spread Spaghetti Sauce Over Eggplant. Mix Cottage Cheese and Mozzarella, and Spread It Over Sauce. Sprinkle With Parmesan Cheese. Bake at 350 For 30-35 Minutes and Serve Hot.
