    What I love about Culinary Quest is trying ingredients from other countries. I love smoked trout and in the PNW we use trout smoked usually on Alderwood and it's a dry trout. But at the Scandinavian store the smoked trout was canned. My family is Norwegian and I wanted to try the trout like my great-grandma Alice would have eaten, so I tried it both ways! And I liked both preparations! (though if I had to choose, I'd choose the drier smoked salmon I'm used to). I served this to friends and we all loved the lemon dill mayo!! I think it would go great with lots of other dishes. Thanks so much for posting LisG! Made for CQ 2017, Scandinavia.
