2 garlic cloves, smashed and chopped
5 slices prosciutto, cut in strips
1/2 cup dry white wine
2 eggs
1/4 cup pecorino cheese, grated
2/3 cup parmesan cheese, grated
fresh parsley, chopped
fresh ground pepper

    Fettuccine Carbonara, As I said before I love my Pol Martin cookbook I will be posting many recipes from his Supreme Cuisine Cookbook Some of his recipe I have already tried and some I haven’t I will always give credit where credit is due So here is another one of his recipes I hope you enjoy , This was a very nice light dinner dish It is so simple to make, too I was a bit frantic to realize at the last minute that I was out of fettuccine, so out of desperation used spaghetti (Sorry about that daisygrl! Next time I make this, I will be sure to have fettuccine on hand!) Made for ZWT5

    Heat Olive Oil in Saute Pan Over Medium Heat.

    Add Garlic and Prosciutto, Cook For 3 Minutes Over Low Heat.

    Add Wine and Continue Cooking For 2 to 3 Minutes.

    Remove Saute Pan from Heat and Set Aside.

    Place Eggs in Bowl and Whisk.

    Add Pepper, Both Cheeses and Mix Well.

    Pour Mixture Over Drained Hot Pasta Mix Rapidly, Season Again With Pepper.

    Add Prosciutto Mixture, Sprinkle With Parsley.
