Ingredients

Adjust Servings:
3 lbs chicken legs with thigh
3/4 cup milk
3 canned chipotle chiles
6 cloves garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon onion powder
1/2 teaspoon salt
2 tablespoons butter or 2 tablespoons margarine
1 1/2 tablespoons flour
1/2 cup heavy cream
1/4 cup sour cream
8 ounces queso cheese, grated (monterrey jack ok)
minced chipotle chile (to garnish)

    I have used this recipe twice. The first time I made it with chicken breasts. used fat free milk and fat free sour cream, and Recipe #113203, and the sauce was just wonderfully creamy and did not feel/taste/seem like I had omitted any fat at all. Tonight used the sauce recipe, doubled it, and prepared it the same low-fat way as I did prior, but I made layered "enchiladas" with Carb Balance (high fiber) tortillas, rotisserie chicken, lots of the sauce, and jack cheese. It was outstanding!! I LOVE this sauce, and thanks for sharing it!

I didnt follow the recipe exactly as written because I had leftover meatballs to use up and I just wanted to make a sauce to put the meatballs in So I didnt use chicken or cheese I just used the sauce ingredients to make sauce in a pan and then I added my meatballs to it and served it over pasta used a whole can of chipotle peppers and I doubled all of the other sauce ingredients It was creamy, spicy and delicious The only change I would make is that I will use light cream next time instead of heavy cream I like heavy sauces but I felt like using heavy cream instead of light cream was unnecessary, especially since the sour cream already makes the sauce creamy

    Preheat Oven to 350 Degrees F.

    Place Chicken in an Ovenproof Baking Dish, and Place in Preheated Oven, and Bake For 25 Minutes.

    Meanwhile, Combine Milk, Canned Chipotles, Garlic, Cumin, Onion Powder, and Salt in a Blender or Food Processor and Puree Until Smooth.

    Heat Butter and Flour in a Large Skillet and Blend Until Smooth; Add Heavy Cream and Sour Cream, Whisking Until Smooth.

    Stir in Chipotle Puree, and Stir Constantly Until Mixture Comes to a Boil and Thickens; Remove from Heat.

    After Chicken Has Baked 25 Minutes, Remove from Oven and Drain Any Fat.

    Pour Chipotle Cream Over Chicken and Top With Grated Queso Cheese.

    Replace Chicken in Oven and Bake For About 20 Minutes More, or Until Cheese Just Starts to Brown.

    Remove from Oven and Serve With Extra Sauce Spooned Over Chicken and Garnished With Minced Chipotle Chiles, If Desired.
