Easy Eggplant Parmesan

    This came out amazing!! First time ever making (or eating) eggplant parmigiana, so I wasnt sure what to expect, but it turned out so good! To be fair, I dont typically measure the ingredients; I just roughly guess.. but I basically doubled this recipe except for the eggplant, since I realized I only had two small eggplants. I also double-dipped the eggplants in the breading like some other reviewers suggested, but it was getting late and I was running out of time so I only did that to half of them, ha.. I also baked the eggplant pieces on 450 for about 20 minutes in the oven instead of frying them. Definitely referring back to this recipe next time I make this!!

    Arrange a Layer of Eggplant Slices in a Colander. Sprinkle Generously With Salt. Continue Layering and Salting All Eggplant Slices. Let Stand 30 Minutes. Rinse and Pat Dry. Dip Each Eggplant Slice in Beaten Egg, and Dredge With Breadcrumbs.

    Heat Oil in a Heavy Skillet. Over Medium High Heat Fry Eggplant in Hot Oil About 2 Minutes Per Side Until Golden. Drain on Absorbent Paper.

    Preheat Oven to Temperature 350f Arrange Half the Eggplant Slices in the Bottom of Baking Dish Sprayed Lightly With Nonstick Spray. Spread Half the Sauce Over Top. Sprinkle With Half the Mozzarella and Half the Parmesan. Repeat Layers.

    Bake 20-25 Minutes or Until Mixture Is Bubbly.
