Easy Manicotti, No cooking the manicotti, so that’s the easy part. Sometimes I will add some frozen chopped spinach, cooked and squeezed dry. A real easy meal!, I cannot tell you how many times I’ve made this recipe! I had no idea that it was possible to NOT pre-cook the manicotti before filling — what a difference! It makes this dish so much easier to make. For the sauce, I first browned a half pound of mild Italian sausage with a half pound of “hot” Italian sausage from our local Italian market; I added the jarred sauce to the meat mixture, and it was fantastic! This is one of my go-to recipes — thank you!
