Baked Brown Rice With Curry, Raisins, and Cinnamon, From Roaring Brook Cooks which is a cookbook from a Westchester, NY school where my DH’s cousins went Their family tried this recipe and said it was very good so I am sharing , Served this with citrus pork chops for dinner tonight and it was yummy I cut the butter to 2 tbs and used golden raisins Loved the addition of the toasted almonds , Used the crockpot at work instead of the oven Cooked it on low for awhile, then high, stirred it a couple of times and added some water toward the end Did the prep at home It took about three hours, was ready for lunch for the office crowd Just as easy and good Subbed water for broth and olive oil for butter Used less than 4 Tbs of oil, too The rice used was very short grain brown rice and it was called sweet brown rice There were no instructions in English on the bag! I mistakenly dumped in the almonds before cooking and it was still a hit While it cooked, delicious smells invaded the office, everyone was ready to try it by the time it was finished

Preheat Oven to 350 Degrees F. |

Melt Butter in a Saucepan That Is Oven-Proof or a 1 1/2 Casserole Pan Add Onions and Raisins; Cook Stirring Constantly Until Onion Is Softened and Lightly Colored. |

Add Broth and Bring to a Boil. Add Rice and Spices and Cover. |

Transfer to Oven and Bake For 50-60 Minutes or Until Liquid Is Absorbed and Rice Is Tender. |
