2 garlic cloves, minced
2 tablespoons fresh cilantro, chopped

Cilantro Lime Chicken Salad

    Took your and another reviewer's suggestion to have this over rice rather than salad (although that sounds good too) and it was really yummy that way. The lime gave the rice a really good flavor. Because I had the chicken over rice, I only used a tiny bit of oil for the dressing and omitted the honey (personal preference). I also loaded up on the cilantro since I love it (and I didn't have any other veggies with this); everything melded very well together.

    Combine the Lime Peel Strip, Soy Sauce, and Chicken Cubes. Place in a Resealable Plastic Bag and Marinate 1 Hour, or Longer.

    Heat the Olive Oil Over Medium-High Heat. Remove the Chicken from the Marinade and Discard the Marinade.

    Stir-Fry the Chicken Cubes in the Olive Oil, Until Opaque and Slightly Browned.

    in a Separate Bowl, Whisk Together the Lime Juice, Olive Oil, Honey, Garlic, Salt, and Pepper. Stir in the Chopped Cilantro. Mix Well, Pour Over the Chicken.
