Monterey Jack Refried Beans,My mom gave me this recipe. Everyone I have ever cooked these for say they will never eat any other refried beans again. There are not any restaurants beans that can beat these!,Great recipe with some tweaks. Used a pressure cooker. Cut the fat in half, used 2 Tbsp butter and a ham bone. Added 1/2 tsp cumin. Only used 4 ozs cheese and cutback salt to 1 tsp. Also used chicken stock to cook the beans. Excellent results.,This recipe turned out good. For some reason my beans needed to cook about 4 hours to get soft and then I made some adjustments to get the right flavor for us. used butter instead of margarine, used half the amount of cheese called for. After tasting the beans, I could really taste the butter and wasn’t loving it. I added about 1 T. minced pickled jalapeno, some chili powder and a tiny bit of cumin. used the whisk attachment on my mixer to mash them. I think I’ll put them through the blender to get them smooth. Easy, tasty recipe and so much better than refried beans from a can. Thanks for sharing the recipe.

Cover Beans With Water; Add Chopped Onion and Bring to a Boil. |

Take Off Heat, Cover and Let Sit 1 Hours. |

Do not Drain Water, but Again Add Enough Water to Cover Beans, Heat to Boiling, Turn Down Heat and Cook Until Beans Are Tender, Stirring Occasionally, About 1 to 2 Hours. |

(add More Water If Needed During Cooking) When Beans Are Done (make Sure There Is not Too Much Water in the Beans), Take Off Heat and Mash With a Mixer Add Margarine, Salt, Pepper, and Cheese and Continue to Beat With Mixer Until the Beans Are Soft. |
