Carrot and Raisin Salad With Pineapple,quick and easy,I made this today for Passover and it was delicious! used a little more than 3 cups of grated carrots and left everything else the same. I mixed in mayo until it looked the way I like it. Excellent recipe.,My sister is addicted to carrot salad and she loved this version with pineapple. i reduced raisins to 1/4 cup becuz i didn’t have enough. Because they plumped up double in size, it was more than enough. I’d do the same next time. I only used an 8 oz small can of crushed pineapple and again, it was fine. I encourage you to drain super well as suggested. Squeeze the juice out as best u can. The rest of recipe used amts listed.
