    Eggplant Aubergine Patties, Another easy eggplant recipe that I found in a local newspaper., Loved the ease of this recipe. used roasted garlic and grated purple onion but it was a bit bland for me. used added garlic powder and topped with fresh Parmesan cheese. I will serve with a dip of spaghetti sauce if used as appetizer or put on bun as a burger substitute.

    Peel Eggplant and Cut Into Small Pieces.

    Boil in Salted Water Until Tender.

    Drain Well and Mash.

    Spray Non-Stick Skillet With Cooking Spray, or Add a Small Amount of Oil.
