Salmon Soup,This is one of those dishes that takes about 15 minutes to prepare from beginning to end. Elegant, light flavor and beautiful color.,Sometimes, simple is best. This was really good. The only thing I changed was to use red pepper flakes instead of cayenne (finesse) and I added some sprinkles of soy sauce at the very end for a little body. I also used shallots in place of an onion (hey, they’re an onion too!) and (Covid times) frozen spinach (water squeezed out) instead of fresh. We served it over salt / pepper seasoned pad thai noodles. Our salmon was a Bristol Bay Red. Fabulous!,Easy and fast to make! There is plenty of space for imagination.

Saute Onion in Olive Oil Until Caramelized. |
