3 tablespoons roasted red peppers peeled seeded and diced
2 tablespoons minced roasted garlic
2 tablespoons minced fresh parsley
2 teaspoons balsamic vinegar
2 tablespoons fresh lemon juice
1 teaspoon salt
1 teaspoon black pepper

    Brush Mushroom With 1 Tablespoon of Oil and Grill Until Tender. Dice Into 1/4 Inch Cubes and Put in Mixing Bowl.

    Cut the Blackened Tomatoes in Half and Squeeze Out and Discard the Seeds and Juice. Dice Small and Add to Bowl.

    Add Remaining Tablespoon Oil and the Remaining Ingredients to the Bowl and Combine Thoroughly.
