Green Onion Potato Casserole

    I've made this a several times now. It's a nice change of pace, the kids like it, and it's easy on the wallet. The last time I made it, I added 6 strips of bacon into the mix, as well as a packet of ranch seasoning. I baked it for 20 minutes, then added a half cup more cheese on top, 3 more chopped slices of bacon, and baked for another 10 minutes. Garnished with a little fresh parsley and served. Good stuff.

    Peel, Quarter, and Boil Potatoes Until Barely Tender.

    Drain, Cool and Grate on Large Side of Grater.

    Place in a Large Bowl.

    Gently Mix in All Other Ingredients, Except Butter.

    Place Mixture Into a Greased Shallow 9x9 Pan.

    Top With Melted Butter.

    Bake at 400 Degrees For 30 Minutes or Until Golden.
