1 (10 count) package 10 inch whole wheat tortillas
1 (8 ounce) package crab or (8 ounce) package imitation crabmeat
1 cup ricotta cheese
1/4 cup grated parmesan cheese
1/8 teaspoon cayenne pepper (powdered)
1/2 teaspoon tabasco sauce (your flavour preference)
1 bunch fresh cilantro, coarse chopped
0.5 (9 ounce) package fresh spinach, stems removed
2 fresh roma tomatoes, skinned and chopped (any size)
1 medium length fresh carrot, grated
1 green bell pepper, roasted
1 sweet red pepper, roasted
1 yellow sweet pepper, roasted
6 - 8 pitted black olives, coarse-chopped
6 - 8 pitted green olives, coarse-chopped

    It sounds great and I'm in the process of making it now. However, there are no instructions about how to incorporate the roasted peppers. Should they be pureed and used as a sauce on top of the rolled tortillas? Or, incorporated in the tortilla filling? I'm going to puree them and use as a topping. It might keep the tortillas from being too dry.

I made these for dinner tonight, and oh my God DH and my son just devoured these in no time I made them with store-bought roasted peppers in the jar, and prepackaged spinach, I did cheat and used imitation crab meat, so I skipped line 19, and just mixed packaged crab with green onions, I also left out the fresh cilantro, as I did not have any in my fridge next time I will mabey try it with fresh crab meat, this is a nice change from chicken or beef tortillas We just loved these, thanks so much Toolie for posting such a wonderful and very tasty recipe, I can’t wait to make these again!     Preheat Oven to 400f.

    Cut the Tops Off the Green, Red, and Yellow Peppers.

    Place Peppers on a Shallow Pan in the Oven and Roast Until the Skin Begins to Bubble and Separates from the Flesh- About 15 Minutes.

    Turn Frequently to Allow All Sides to Roast.

    Remove from the Oven and Let Cool.

    Peel the Peppers, Make One Slit in the Peppers to Open.

    Remove and Discard the Seeds.

    Coarse-Chop the Roasted Peppers and Set Aside.

    This Is the Only Time You Will Use Your Oven.

    Cheddar Cheese: Shred Cheese and Set Aside in a Separate Bowl.

    Ricotta Cheese Mixture: Wash the Spinach Leaves Well; Remove and Discard the Stems from the Spinach.

    Place in a Saucepan on the Stove Over Medium Heat.

    There Should Be Sufficient Water Left on the Leaves, to Cook the Spinach Until It Wilts; Additional Water May Be Added If You Feel It Necessary.

    Remove Cooked Spinach from Pot and Place in a Colander Over a Bowl, to Drain.
