Simmered Chinese Chicken, This is a super easy to make all in one-pot dinner. The flavors are wonderful. The recipe calls for a whole chicken but I have also made it with boneless breasts and thighs., Thanks Mom of Pvt. Amy for a delicious all in one pan chicken. I did not have a lot of chicken pieces so I halved the recipe. I made the mistake of adding some chunks of red potatoes along with the chicken. That explains why the sauce disappeared. I even added a half a cup of water to the pan and scraped up the bits which left me with a bit of sauce. Next time I will cook potatoes or any veggies separately. AND I will double the sauce. Also I did not have apple juice so used pineapple juice. Let me say, it was so delish with the sauce caramelizing onto the chicken, giving it a sweet sticky bbq flavor without an outdoor grill !! The chicken cooked in about 1/2 hour. Definitely making this again with lots more sauce which was soooooo tasty! You guys have to try this. It is really finger lickin good !!, I needed something simple and quick, this fit the bill perfectly. Even more importantly, the entire family loved it. Definitely a keeper! Thanks for the recipe, Pvt Amys Mom
