Coconut Cookies

    Hi I chanced on your recipe today and tried it out. I did some changes to the recipe. Instead of the sugar (my brother and mother are diabetics), used about 1/4 cup of honey + 2 tbsp of unsweetened cranberry juice and some vanilla essence. Given this was liquid vs sugar, I added more than 2 cups of flour - probably 2 plus more cups of flour. I wasn't sure how this would turn out. What I found was that the dough when needed was coming apart. Not sure why this way. Some of the cookies had cracks. I didn't realise this would be a soft cookie. It does taste good and mild mild sweet. Any advice on what I could have done? One suggestion - if not too much trouble - to do a video of how to made this and what the cookie dough would look like. used a cookie heart shape mould.
