This makes a great veggie side, and with the cheese, kids will eat it without asking questions. Depending on your taste, you can use regular sour cream, light sour cream, or butter.,I’m not a big fan of cheese so I mellowed the recipe down with low-fat mozzerella cheese and added a clove of roasted garlic and some pepper. Instead of sour cream, used fat free plain yogurt.
