Irish Mashed Potatoes With Cabbage,This is typically called Champ, but this one has some added ingredients! Adapted from Cooking Light.,Loved, loved, loved this recipe. I never ever thought of adding cabbage to mashed potatoes before. Brilliant! Our neighbor came over for dinner (and he hates cabbage, saurkraut, Brussels sprouts, etc…) He loved the potatoes! (Of course I did not tell him what he was eating). I didn’t use “low fat” or “light” anything… I went with the full blown, heart attack waiting to happen ingredients, and it was terrific! (I can’t resist the flavors). I served this with oven baked chicken quarters and, ironically… Brussels sprouts (which our neighbor wouldn’t even put on his plate). LOL. Thank you for a wonderful side dish to a perfectly delicious dinner. Wouldn’t change a thing! (Made for PRMR – Spring 2013).

Preheat Oven to 350. |

Combine First 4 Ingredients in a Large Stockpot; Cover With Water. Bring to a Boil; Cover, Reduce Heat, and Simmer 30 Minutes. Drain. |

Return Potato Mixture to Pan. Add Cream Cheese, Milk, Sour Cream, Salt and Pepper; Mash With a Potato Masher. Spoon Potato Mixture Into a 1 1/2-Quart Casserole Coated With Cooking Spray. Cover and Bake at 350 For 45 Minutes or Until Thoroughly Heated. |
