Simple Caribbean Jerk Chicken

    This recipe does not render Jamaican Jerk chicken, it's not even close. It is a recipe for Marinated Baked Chicken. The flavor profile is not that of Jamaican Jerk anything. Jerk, is smoke grilled at the end of a four day jerk period in a specific jerk sauce. It is slow grilled over pimiento wood that is not available in the USA. The herbs and spices used in the jerk sauce do not use Italian ingredients. Instead, the following 3 ingredients MUST be part of any Jerk sauce: allspice (Jamaican Pepper), scotch Bonnet Peppers, and thyme. Please do not use this recipe and call it Jerk.
