    This was a great side dish to the Orange Chipotle Scallops I made. I was in a hurry and found this online quickly. It was perfect! I made it with a sweet potato and a white potato because that was what I had on hand. It's a great blend of flavors! It's a keeper in my resume file!

    Mexican Mashed Potatoes, Just some new additions to already prepared mashed potatoes to make them take south of the border!, This was a great side dish to the Orange Chipotle Scallops I made I was in a hurry and found this online quickly It was perfect! I made it with a sweet potato and a white potato because that was what I had on hand It’s a great blend of flavors! It’s a keeper in my resume file!, So I really went off on my own little path with these, but YOUR great idea to spice/zest them up got me on the right track I had leftover mashed potatoes and we were having spiced chipotle flank steaks for dinner I added jack and chedder cheese, chipotles in adobo sauce, and diced cilantro They were scrumptious! And I’m sorry to hijack your recipe it was your technique and south of the border idea!!!
