Cheese Puffs

    The trick to making these little puffs "puff up", is to grate your own cheddar from a block. **Do not use store bought grated cheese.** The store bought has a coating on it to prevent from sticking and this causes the cheese not to behave as it should. I grated my cheese mixed with softened, non salted butter, 'sifted' flour and about a teaspoon of of "Slap Ya Mama" cajun spice seasoning. I mixed it together thoroughly with gloved hands until it almost looked like pie dough. The flour and butter have to mix completely to avoid the "grainy" texture some have written about. I rolled them into marble size as instructed and got 116 puffs! I baked 15 mins at 350 and they came out perfect. I'm posting a picture, but I don't have the camera nor the skills as some who post, but I wanted to prove these could be done! Oh and they were great! Very crunchy, cheesy and with the SYM spice, it was awesome!
