Crispy Oven-Fried Cod Fish,I’m sorry, but we found the fish (cod) dry, and the coating tough. I normally love kittencal’s recipes, so I was surprised.,I made this tonight. My wife and I enjoyed it with a nice baked sweet potato, dirty rice, and a simple salad. I thought it was pretty good, so I decided to have a second helping. As it turns out, it was really great! Crispy and flavorful. The second helping was even better than the first. I can’t figure out how, as every piece was treated exactly the same, then set aside so they could be cooked exactly the same time. Go figure. I might try a bit less cayenne next time, not because it was a problem, but for a small twist, as there isn’t much else one can do to improve upon this recipe.
