Vegan Broccoli & Cauliflower Casserole, A delicious cheesy blend of cauliflower and broccoli, veganized, with some crunch and an interesting spice addition , Really, good, quick and easy Followed recipe exactly except I didn’t have any vegan cheese and since we are not strictly vegan substituted a couple of tablespoons of parmesan cheese Also, I find it easier to make a white sauce like this in the microwave – after whisking everything together heat on high, stirring after 1- 2 minutes Mine was thickened after only 3 minutes , Really loved this casserole! Just finished making it and already on my second bowl 🙂 It was simple and quick to make — although, I did double the baking time It’s best to keep an eye on the breadcrumbs and cheese and just remove when browned Mine was about 20-22 minutes
