Green Tortilla Chili, This is from the Rachael Ray Show. I am making this tonight for a quick, easy dinner! Will post pictures ASAP! Would be great with a green salad for a figure friendly meal-maybe even a twist on the traditional taco salad??, I have been making this for a long time now as I saw it on Rachael’s show too! It is delish. It is so tasty due to the cilantro, salsa and garlic. Yummo!!!, I made this for our PTA’s “Soup Day” for our teachers. This was the first to go! I added a can of rinsed black beans and a can of corn for color. I also added more tortilla chips than the recipe called for to thicken it up. I served this with shredded pepper jack cheese, sour cream and tortilla chips. After it was finished cooking, I did put it in the crockpot over night set at warm…..I think this helped thicken it up and give it more of a chili consistency. Delicious!!!!! Besides regular chili, this is the first soup/chili I have ever made from scratch. Very easy!!!!
