3 cups rolled oats
1/2 cup coconut
1/2 cup slivered almonds
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/2 cup crushed pecans or 1/2 cup walnuts
1/2 teaspoon cinnamon
1/2 teaspoon salt
4 tablespoons butter
1/3 cup honey
1/2 teaspoon vanilla
1/2 cup raisins or 1/2 cup dates
1/2 cup dried cranberries

    This is a really good recipe for homemade granola. It would be great to use on top of yogurt, or to eat as a cereal with milk, but I just eat it by itself as a healthy snack. used every single nut and fruit called for and wouldn't change a thing, except maybe add a little brown sugar to the butter/honey mixture. FYI, this recipe is NOT the "cluster type" granola. Thanks for posting this recipe! Made for My 3 Chefs, 2009. *Update 2/24/10* I have made this several times now and I have tweaked it a bit for personal taste. I add a couple of tablespoons of brown sugar to the honey/butter mixture and use 1 cup of pecans instead of 1/2 (I LOVE pecans!). I have found that I love this mixed with a bowl of Frosted Flakes in milk (I know, it's not as healthy that way). use about 1/2 granola and 1/2 Frosted Flakes. It makes a wonderful late night snack or breakfast.

    Preheat Oven to 325 Degrees.

    Stir Oats Through Salt Together.

    in Pan, Melt Butter With Honey.

    Add Vanilla, Pour Into Bowl.

    Toss With Oats and Spread on Baking Sheet.

    Bake, Stirring Every 5 Minutes For 20 Minutes.
