Babys Squash Casserole

    I made this to go alongside some fish using butternut pumpkin or squash as you call it. I was worried from the ingredients that it might be a little bland but the onion flavour gives it just enough punch, a lovely side and a great different way to serve pumpkin. I think this would also be great with some bacon added, yummo! Oh I topped mine with seasoned breadcrumbs rather than cracker crumbs..

    Baby’s Squash Casserole, Simple, easy, and good My grandmother’s recipe , I made this to go alongside some fish using butternut pumpkin or squash as you call it I was worried from the ingredients that it might be a little bland but the onion flavour gives it just enough punch, a lovely side and a great different way to serve pumpkin I think this would also be great with some bacon added, yummo!
