Almond Tarragon Chicken Salad, used to get this salad at the deli in Publix supermarket, it was around six dollars a pound It is so easy to prepare at home Tastes great on crescent rolls or just about any bread of choice, toasted or plain , Wondering if this Almond tarragon chicken salad would freeze well or not?, Love it, but love my version even more I poached my chicken breast with some added herbs (pick your favorites) then I let them cool and cleaned them up a bit I then shredded them in my food processor to get it broken down easily to a great consistency I followed the rest of the directions, but instead of adding any extra seasoning, I added a little more mayo and arugula Love it on a wrap Arugula is a peppery green that gives the salad an added boost of flavor and is a known antioxidant high in Vitamin B and Folate
