1/3 cup onion, diced
1/3 cup celery, diced
1 1/4 cups cremini mushrooms, diced
1 small zucchini, diced
1 medium apple, cored and diced
2 (120 g) boxes stove top stuffing mix
1/4 cup pecans, chopped (optional)
1 teaspoon dried sage
1/4 teaspoon black pepper
1/4 cup water
1 large egg
200 g double cream brie cheese, sliced into 24 wedges and rind removed

Preheat Oven to 400f.

Melt Butter in a Large Pan and Saute Onions and Celery Until Tender.

Add Mushrooms, Zucchini and Apples and Saute Until Slightly Browned.

Remove from Heat and Transfer to a Large Mixing Bowl to Cool.

Add Stovetop Stuffing, Pecans, Sage, Pepper and Water to the Vegetable Mixture and Stir Until Evenly Combined and Moistened.

Add Egg to the Mixture and Stir Until Evenly Coated.

Spray a Muffin Tin With Non-Stick Cooking Spray and Scoop the Mixture Into Each Cup, Pressing Down Gently as You Go.

Bake For 15 Minutes or Until the Stuffing Cups Begin to Brown on Top.

Remove from Oven, Place Two Wedges of Brie Cheese on Top of Each Cup, Then Put Back in the Oven For 5 Minutes or Until Cheese Is Melted.
