My new favorite quiche! I really liked the combo of bacon, cheese, and spinach. I served it with a spinach salad and it made a great late night supper. I think it would be wonderful for a brunch, lunch, or breakfast as well. Instead of using all cheddar cheese, I did use mostly sharp cheddar and filled in with a little Swiss that I had left over. It did seem just a tad too salty though. That could be due to the type of cheese used or maybe my bacon was too salty. Also, the crust did seem to brown a little too much but that may be due to my oven which heats a little higher than it should. Next time I think I will use a mild cheddar, I'll set the oven at 375 and check it at 30 and 35 minutes.
