    Shredded Chicken Quesadillas,So yummy,Wow. nothing more needs to be said.,TERRIFIC!! This is more than a “recipe”, it is actually a brilliant cooking technique. One could vary the filling to suit preferences or ingredients on hand. I lightly oiled my pan with HEB garlic infused canola oil. The only two things I would change is to line the pan with foil to cut down on the mess, AND turn the oven down a notch. My first batch was a little tinged on the edges. Thank you for yet another wonderful recipe!

    In a Skillet, Combine the First 6 Ingredients.

    Over Medium Heat, Cook Uncovered, For 10 Minutes or Until Heated Through, Stirring Occasionally.

    Brush One Side of Tortillas With Butter.

    Spoon 1/3 Cup Chicken Mixture Over Half of Unbuttered Side of Each Tortilla.

    Sprinkle With 1/3 Cup of Cheese; Fold in Half.

    Place on a Lightly Greased Baking Sheet.

    Bake at 475 Degrees For 10 Minutes or Until Crisp and Golden Brown.

    Cut Into Wedges; Serve With Sour Cream and Guacamole.
