Along with the couscous and red pepper, this makes a great meatloaf for people who don’t like turkey. Leftovers would be great in a pita or with naan. Cooking times listed are for the original recipe which uses only one pound of turkey, so I increased time and double checked with a thermometer to make sure it was cooked through.
