Potato and Green Bean Salad With Balsamic Vinaigrette,This is awesome! This salad will stay for several days, and improves in flavor. It may be served chilled or room temperature. Preparation time includes cooking the potatoes and beans.,I loved this mixture of flavors. use my Cook’s Illustrated potato trick whenever I make potato salad. Cut the potatoes in 3/4 inch cubes, cover with water and add 1 tblsp of salt after they start to boil. Simmer of med heat for 8 minutes. Drain and don’t bother rinsing. Then used 1/4 tsp pepper and 1/2 tsp salt in the vinaigrette. I steamed the green beans for 18 minutes… will probably try 15 minutes next time. This is best if you let the flavors blend for a couple of hours. It was also still yummy the second day.,This is a summer go to recipe and it is good as is and adding bacon. green onion and red pepper just adds a little something extra.
