1 medium onion, chopped
1 small red pepper, seeded and chopped
3 cups whole milk
4 large eggs
1 tablespoon . dijon mustard
1 teaspoon italian herb seasoning or 1 teaspoon oregano
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
10 - 12 slices day-old firm white bread, crusts trimmed
1 1/3 cups shredded sharp cheddar cheese
