    Weeknight Beef Enchilada Casserole, I got this recipe many years ago when I requested recipes from family members for a family cookbook It took a long time for me to try it and I was glad when I finally did The ingredients mix well and result in a creamy casserole , The recipe calls for 1 pound of shredded cheese – this is all mixed together with the rest of the ingredients (not on top)?, Very good Also pretty rich As others have mentioned, even better the second day Second time I made it I substituted a can of soup for a cup of milk Turned out fine To cut the richness, I garnished with shredded lettuce and picante instead Delicious!
