Tomato-Basil Pasta Salad, I got the basis for this recipe from my cousin’s wife, who absolutely adores the taste of fresh basil! This is a great, simple summer pasta salad, with a nice light blend of flavors. FRESH basil is a must on this one!! This salad is great alongside BBQ chicken. Easy, and yummy!! Prep. time includes marinating time., Super tasty. I added fresh mozzarella and Coppa. Snagged the tomatoes and basil from the garden and went to town. Very delish!, I am loving this salad. This time around, it’s as little dry, since I decided to use the entire box of pasta plus what was leftover from the last time. I just need to get to the store and grab a few more roma tomatoes and make up the “sauce”. However, given that, it’s still very good and enjoyable. With summer fast approaching, and my basil going crazy, this will be my weekly lunch.
